Lumberjack skillet recipe

I received this recipe from a friend who got this version from a popular theme park in our area.  It has been changed a bit…here is my version:

  • 1/2 cup extra light olive oil (best for frying)
  • 2-3 yellow squash
  • 1 cup okra
  • 1/2 bell pepper
  • 1/2 chopped onion
  • 2-3  potatoes peeled and cut into strips
  • smoked sausage link chopped into 1 inch pieces

Toss okra and squash in small amount of flour, then fry to golden brown in half of oil.  Place on paper towels to drain, set aside.  In same skillet, add more oil,  saute bell pepper, onion, and potatoes; set aside.  In same skillet, fry sausage pieces.  When almost done, add all ingredients back to skillet turning heat to simmer; lightly toss to reheat and distribute flavors for 1-2 minutes.  Place on lovely platter and serve. (as shown above)

Note: Original recipe calls for adding bacon fat to enhance the flavor, but I don’t always use this method for various reasons.  Sometimes I just love the taste of the lightly crisped vegetables.
